Homemade Vanilla Cake Recipe

Ingredients:

  • 2 1/2 cups all-purpose flour
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup unsalted butter, room temperature
  • 1 3/4 cups granulated sugar
  • 4 large eggs, room temperature
  • 1 tbsp vanilla extract
  • 1 cup whole milk, room temperature

For the frosting:

  • 1 cup unsalted butter, room temperature
  • 4 cups powdered sugar
  • 2-3 tbsp heavy cream
  • 2 tsp vanilla extract
  • Pinch of salt

Instructions:

  1. Preheat the oven: Set the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Mix dry ingredients: In a medium bowl, whisk together flour, baking powder, and salt.
  3. Cream butter and sugar: In a large mixing bowl, cream the butter and sugar together using a mixer on medium speed until light and fluffy (about 3-4 minutes). Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
  4. Combine wet and dry: Gradually add the dry ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
  5. Bake the cake: Divide the batter evenly between the prepared pans. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  6. Prepare the frosting: Beat the butter until creamy. Gradually add powdered sugar, heavy cream, vanilla extract, and salt. Beat until the frosting is light and fluffy (about 3-4 minutes). Adjust consistency with more cream if needed.
  7. Frost the cake: Once the cakes are cooled, spread frosting between the layers and on the top and sides of the cake.
