Madagascar Vanilla Bean Ice Cream
Ingredients:
- 2 cups whole milk
- 2 cups heavy cream
- 1 Madagascar vanilla bean, split and scraped
- 6 large egg yolks
- ¾ cup sugar
Instructions:
- In a saucepan, combine milk, cream, and vanilla seeds and pod. Heat until just simmering, then remove from heat and let steep for 30 minutes.
- Whisk egg yolks and sugar together until light and fluffy.
- Slowly whisk the warm milk mixture into the egg mixture, then return to the saucepan.
- Cook over low heat until thickened, about 10 minutes.
- Strain and refrigerate until chilled, then churn in an ice cream maker.
