Madagascar Vanilla Bean Ice Cream

Ingredients:

  • 2 cups whole milk
  • 2 cups heavy cream
  • 1 Madagascar vanilla bean, split and scraped
  • 6 large egg yolks
  • ¾ cup sugar

Instructions:

  1. In a saucepan, combine milk, cream, and vanilla seeds and pod. Heat until just simmering, then remove from heat and let steep for 30 minutes.
  2. Whisk egg yolks and sugar together until light and fluffy.
  3. Slowly whisk the warm milk mixture into the egg mixture, then return to the saucepan.
  4. Cook over low heat until thickened, about 10 minutes.
  5. Strain and refrigerate until chilled, then churn in an ice cream maker.
