Madagascar Vanilla Panna Cotta

Ingredients:

  • 2 cups heavy cream
  • 1 cup whole milk
  • 1/2 cup granulated sugar
  • 1 Madagascar vanilla bean (or 1 tbsp Madagascar vanilla extract)
  • 2 1/2 tsp powdered gelatin
  • 3 tbsp cold water

For the topping:

  • Fresh berries (raspberries, blueberries, etc.)
  • Caramel sauce (optional)
  • Vanilla pods and edible flowers for garnish (optional)

Instructions:

  1. Prepare the vanilla: Split the Madagascar vanilla bean lengthwise and scrape out the seeds. Set aside both the seeds and the pod.
  2. Heat the cream mixture: In a saucepan, combine the heavy cream, milk, sugar, vanilla bean seeds, and pod. Heat over medium heat until the sugar dissolves and the mixture begins to steam, but do not let it boil.
  3. Bloom the gelatin: In a small bowl, sprinkle the gelatin over cold water and let it sit for about 5 minutes until the gelatin softens.
  4. Combine gelatin and cream: Remove the vanilla pod from the cream mixture. Stir in the bloomed gelatin until fully dissolved.
  5. Chill the panna cotta: Pour the mixture into individual serving dishes or molds. Refrigerate for at least 4 hours or until fully set.
  6. Serve: Top the panna cotta with fresh berries and drizzle with caramel sauce. Garnish with vanilla pods and edible flowers for a beautiful presentation.
